Vegetable Lentil + Quinoa Stew (GF/V)


My favorite recipe for a busy night is this stew using my instant pot! 3 min prep, 30 min cook time!

Vegetable, Lentil + Quinoa Stew

Serves 4


  • 1/2 cup quinoa, rinsed/drained
  • 1/2 cup lentils
  • 1 can of beans (best is cannellini or garbanzo), drained/rinsed
  • 4-5 cups veggie broth or water (add more salt/seasoning if using water)
  • 1 tbsp olive oil
  • 1/2 green bell pepper, diced
  • 1/2-1 zucchini, diced
  • 1 Roma tomato diced or 1/2 can diced tomato
  • 1-2 whole carrots, sliced
  • 2 tsp each of garlic powder, onion powder, chili powder, thyme
  • 1 tsp  each of salt and pepper, basil and oregano
  • 1 tbsp cumin
  • 5 cloves garlic, minced
  • 1 Roma tomato diced or 1/2 can diced tomato


  1. Place all ingredients in an instant pot and cook on high pressure for 30 minutes. Allow for natural release. Or place all ingredients into a crockpot on low for 4-6 hours. This stew is very thick, add 1-2 cups water if you want it less thick.
