Southwest Yellow Rice and Bean Salad

*And by salad I mean rice with lots of veggies. Lettuce be honest. 

A rice cooker was one of the greatest gifts I received from my momma! I have tried (unsuccessfully) so many times to make rice on the stove..either it is a mush or hard as rocks, which was an issue because rice was a staple food in my diet.

I had resorted to the quick rice in a bag which at times didn’t even resemble real rice. NOW, not only do I make a killer white or brown rice, I can now spice things up, like with this southwest inspired yellow rice.

FUN FACT: Women in India sometimes use turmeric paste to remove excess body hair.. Turmeric is one of my favorite herbs to cook with. I add it to my curries, rice, milk or water. The color is beautiful and so are its countless healing and medicinal properties!

Southwest Yellow Rice and Bean Salad

SERVES 2-4

INGREDIENTS

ADAPTED FROM THE ORIGINAL RECIPE BY Food&Wine

  • 1 cup organic rice
  • 2 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp turmeric
  • 1/2 tsp ground cumin
  • 1.5 tsp salt
  • 1/4 tsp black pepper
  • 1 bay leaf
  • 1 can drained/rinsed canned black beans
  • 1 green bell pepper, chopped
  • 2 roma tomatoes, diced
  • 1/4 cup chopped cilantro
  • Optional: corn, jalapeños, lime

DIRECTIONS

1. I added all ingredients {up until the bay leaf} to my rice cooker. While the rice cooked I prepped the rest of the veggies. Once the rice was done I mixed everything together. This is a must try!
