DELICIOUS VEGAN BREAKFAST RECIPES

Ever since I was a kid, breakfast has always been my total fave. I would beg for breakfast for dinner. I’ll try not to spam my new social platform with breakfast breakfast BREAKFAST so just to start, I have here an assortment of morning goodies to share with you.

 

Vegan Banana Pancakes

INGREDIENTS

  • 1 c oats
  • 1 c non-dairy milk (I used almond)
  • 1/3 c flour
  • 2 tsp baking powder
  • 1 large, ripe banana, mashed
  • 2 tbsp chia seeds
  • 1 pinch salt

DIRECTIONS

  1. Blend all ingredients with hand mixer or blender until blended and smooth.
  2. Pour mix on to hot pan-greased with vegan butter or olive oil- over medium heat (no more than 2-3 pancakes at a time depending on the size of your pan.
  3. Cover pan with lid until bubbles begin to form, then flip and cook until browning on bottom of cakes appear.
  4. Serve with maple syrup, fresh fruit or nuts.

 

Tofu Scramble

INGREDIENTS

  • 8 oz extra firm tofu
  • Olive oil
  • 1/4 red onion, thinly sliced
  • 1/2 red pepper, thinly sliced
  • 2 c kale, loosely chopped
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin powder
  • 1/4 tsp chili powder
  • 1/4 tsp turmeric (optional)

Mango-Pineapple Smoothie Bowl

INGREDIENTS

  • 1 c frozen mango
  • 1 c frozen pineapple
  • 1 c almond milk or orange juice
  • 1-2 tbsp maple syrup

DIRECTIONS

  1. Blend all together in high-speed blender. It should be thick. Pour into bowl and top with fresh fruit, granola and coconut. See how to create a kiwi flower here.

 

Chia Banana Almond Oats

INGREDIENTS

  • 1 c rolled oats
  • 1 c water
  • 1 c non-dairy milk (I use almond)
  • OPTIONAL: salt, sugar, cinnamon
  1. Combine all ingredients to a pan over medium heat and bring to a simmer. Once the liquid begins to thicken and the oats are softening, add optional flavorings such as a pinch of salt, some sugar or cinnamon.
  2. Stir frequently and simmer until the oats are juuuust right (all on preference of your desired texture).
  3. I topped my bowl with fresh banana, chia seeds, almonds and an almond butter drizzy drizzle.

 

Acai Smoothie Bowl

INGREDIENTS

  • 1/2 c frozen organic acai puree
  • 1/2 frozen blueberries
  • 1/2 c strawberries
  • 1 c almond milk or orange juice
  • 1-2 tbsp maple syrup or 1-2 figs

DIRECTIONS

  1. Blend all together in high-speed blender. It should be thick. Pour into bowl and top with fresh fruit, granola, hemps and chia seeds.
